Mary and I started Armadillo Coffee Roasters because we were tired of hunting for the best coffee beans in Austin that actually tasted like coffee should. We roast 20 to 30 pounds per batch, every single week, in our Wells Branch roastery at 2711 Daisy Drive. That’s it. No giant drums churning out thousands of pounds while some computer decides when the roast is “good enough.” Mary monitors every batch using open-source roasting software we’ve tuned ourselves.
