We roast throughout the week in 20 to 30-pound batches, just enough to keep quality tight and consistent. Your order typically ships within a week of roasting. By the time it hits your mailbox, those beans are still waking up and hitting their flavor peak. No stale inventory. Ever.

Absolutely. We always recommend whole bean if you have a grinder, that's how you lock in freshness until the last second. But we know not everyone does, so we grind to order, too. Just pick your brew method when you order: drip, French press, pour-over, espresso... we'll dial in the grind size for you.

For straight shots and traditional espresso, we reach for Black Gold –our espresso blend of medium-roast coffees from all-women producers in Huila, Colombia. It's built for rich crema and balanced sweetness. For espresso-based drinks that are sweeter – such as a vanilla latte, we recommend Texas Twilight. It's a darker roast, so those rich, darker flavors balance perfectly when you're adding syrups or milk. And for the true aficionados? Our light roasts, co-ferments, and single origins can be incredible as espresso — harder to dial in, but more rewarding for the espresso enthusiast.
